Wild Alaskan Halibut, Black Cod Harvest Season Open

JUNEAU, Alaska -- The wild Alaskan halibut and black cod fisheries officially open this weekend, and will run through Nov. 15, 2007, a representative here said. Both fish are harvested from Alaska's waters.

Alaska halibut, known as the "steak of seafood," has a mild, slightly sweet flavor complemented by a firm texture, said the Alaska Seafood Marketing Institute (ASMI). It is light and lean, suitable for a wide variety of cooking applications, and often recommended by retailers to gateway seafood eaters, the organization said. Alaska black cod is often referred to as the "caviar of fish" because of its delicate yet rich texture, buttery taste, and limited availability, it added.
