Having pioneered a patent-pending process in which light triggers vitamin D generation in mushrooms, Westlake Village, Calif.-based Dole has now introduced Portobello Mushrooms with naturally enhanced levels of the nutrient, which supports bone health and has recently been linked to a lower risk of certain types of cancer, among other benefits. The mushrooms, available in Whole and Sliced varieties, offer more than 100 percent of the recommended daily requirement of vitamin D, in addition to providing seven other vitamins and minerals. According to Gary Schroeder, director of Dole Mushrooms, the items are "the only natural, non-animal source of vitamin D available.
