Fairfield, N.J.-based Schuman Cheese, previously Arthur Schuman Inc., has introduced Yellow Door Creamery, a brand that complements Schuman’s flagship brand. Among the new brand’s offerings is its Hand-Rubbed Fontina Cheese, which hails from Lake Country Dairy, in Turtle Lake, Wis., and is made using traditional methods, giving the cheese a smooth, creamy texture. Available in such varieties as Harissa, a smoky blend of chili, cumin and caraway seed; Tuscan, a classic blend of Italian herbs and spices; and Habanero & Lime, a citrusy blend of habanero pepper and lime, the cheese is hand-rubbed with vibrant spice blends from around the globe and naturally aged for more than 60 days. Its SRP range is $4.99 to $5.49 for a 5-ounce unit.
