Two new organic varietals are now available from El Cerrito, Calif.-based Lotus Foods, which sources premium heirloom rice from remote corners of the globe: bamboo-infused Organic Jade Pearl and so-called "black" Organic Forbidden Rice (actually dark purple in color). Packed with nutrients, the varieties offer distinctive flavors and dramatic meal presentation opportunities. Additionally, unlike other black rice from Asia, Forbidden Rice isn't glutinous and needs no soaking; Grains remain separate when cooked, and soft.
