Dietitian Group Offers Resources to Reduce Food Waste

Earth Day on April 22 is almost here, so plans to promote green initiatives among shoppers should soon be in place. New resources to help fight food waste from the Academy of Nutrition and Dietetics Foundation can help extend retailers' efforts throughout the year.

The Foundation recently released "The State of America’s Wasted Food & Opportunities to Make a Difference," as part of its Future of Food initiative. The report details how and where wasted food occurs in the U.S. along the entire food supply chain, including farms, processors, distributors, wholesalers, retailers, restaurants/foodservice establishments and consumers.

The report highlights innovative ways to reduce food waste, including in the retail and food service sectors. One example is Wal-Mart’s pilot program in the U.S. to reduce the amount of wasted eggs by substituting a good egg for a cracked egg rather than discarding the entire carton. This move not only slashes food waste, but may potentially reduce production costs for Wal-Mart by $50 million a year. Another example is the “Imperfectly Delicious Produce” campaign by Bon Appétit, a food service management company, which keeps wholesome, but less-than-pretty produce from going to waste. The company works with the supply chain to identify and “rescue” produce by getting it to chefs who creatively use it in dishes like soups, smoothies and baked goods.

The Future of Food initiative also offers the "Tossed Treasures. How We All Can Waste Less Food toolkit," which retail dietitians will find handy for supermarket tours, classes and community events. The toolkit, which is available in English and Spanish, includes a presentation for adults or mature teen audiences with a 25-minute PowerPoint presentation, leader notes, a suggested five-minute group activity and a handout with tips on understanding dates on food labels, proper food storage and clever ways to use up leftovers.
